北海道的新札幌(Shin-Sapporo)是味噌拉面诞生之处。如果有机会到日本,一定要走一走位于新札幌的拉面街。在那个小巷里有17家辣面店,每一家都各有特色,观光为颇浓。很多明星的签名挂满牆壁,代表受欢迎的程度。记得挑人多的拉面店就对了,因为只有美味的拉面才会有人愿意排队。
如果没有机会到日本也没关系,位于新达城新开的新札幌拉面馆(Shin-Sapporo Ramen)也售卖相当不错的拉面!
老板Chiam让我想起电影《拉面女孩》(The Ramen Girl)。因为他特地远赴大阪和横滨,花了3个月学做拉面。那么有志气,抱着理想去学拉面,真的很难得。:)
新札幌拉面馆的汤头是用猪大骨慢火熬煮15小时,汤汁牢牢锁住豚骨汤头的醇香及原味,还加了海鲜增加味道的层次感。店里只售卖四种不同口味的拉面:味噌拉面(miso)、博多拉面(hakata)、咸味拉面(shio),和酱油拉面(shoyu)。

Shin-Sapporo Miso Ramen ($15)
点里的招牌拉面。味噌酱是用传统豆酱制成,我原本还担心会很咸,不过喝了过后,味道刚好!这碗拉面卷又稍微比较厚,加入日本叉烧和温泉蛋,好吃!

Hakata Tonkotsu Ramen ($15)
博多拉面和我在熊本吃的拉面很相似,面条加了很多蛋白,又细又直。汤头有浓浓的奶油味,喝多了可能会腻。相比之下,我还是比较喜欢Miso Ramen的整体味道。

Shio Ramen ($14)
如果你喜欢喝较咸的汤,可以选择这碗加入日本海盐的拉面。
店里的第四种拉面:Shoyu Ramen ($14)。很可惜吃不到,下次一定要回来试一试!

告诉你们一个秘密,来这里吃拉面一定要配这盘香喷喷的猪肉碎。它算是店里的秘密武器,不在菜单里,通常只有熟客才知道它的存在。现在你们知道了这个秘密,下次到这里吃拉面时,一定要向侍应生讨这盘猪肉碎哦!

这家拉面店的温泉蛋真的做得一流,吃过那么多家本地的拉面餐厅,这家的鸡蛋应该是最好吃的了。那滑不流手的白滑蛋白,那甜而不腻的糖心蛋黄,真的美味极了!单是想起,已叫人回味无穷!

日式煎饺子,里头的馅料有猪肉和韭菜,如果韭菜再放多一点会更好吃!
忘了拍照,餐厅里还有特制烧烤猪肉片(Yakibuta)。老板用了日本酱油、香料,和一些秘密酱汁烧烤,每片猪肉闻起来香味四溢,非常有咬劲!

食客还可以在餐厅里看到制作拉面的过程。这架机器,看起来没怎么样。其实,它是店里的灵魂。从揉面粉到切面条,每个步骤都用这拉面机器代劳。面粉的分量、水分、搅拌时间等都非常讲究。
从店主的博客上发现日本竟然有一家拉面博物馆,展示远近闻名的拉面历史与文化,还汇集了日本全国北至北海道、南到九州风味不同的拉面店共9家,并展销日本全国320家拉面店的大碗及各种速食拉面。下次我一定要去那里看一看!

& I have been there twice & asked twice, still no. You may wish to update your blog so that consumers don't have wrong expectations.

Hi Shirley, thank you for your comment. I have called the boss of Shin Sapporo to verify. They still have the minced pork but because it's so popular, it's usually given out by lunch time, hence if u go during dinner, they may not have it anymore.
Next time when u patronize again, perhaps u can look for the boss by the name of Chiam. Ask from him personally and tell him u got to know this place from my blog.
