[ CNY 2014 ] Auspicious Treats at Man Fu Yuan, Intercontinental Singapore

THIS IS THE MOST IMPRESSIVE CNY TREATS I HAD IN 2014. In keeping with the traditions of Lunar New Year, Executive Chef Kwan Yiu Kan from Man Fu Yuan at Intercontinental Singapore have created specialty dishes and reunion menus steeped in symbolism of the occasion, with themes of prosperity, longevity and happiness woven into each dish.

During the media preview, we had a HUGE “Horse-shaped” Properous Yu Sheng to herald in the Year of the Horse. It is so huge that we have to use a long spatula to toss for prosperity.

Of course that was just a surprise for us lah. The actual serving is not so huge! Man Fu Yuan’s signature yu sheng offers a mouth-watering combination of salmon, hamachi (yellowtail), ikan parang and crispy fish skin ($168, serves 5 pax). It is available through February 6.

The lavish dish fo tiao qiang (Buddha jumps over the wall) has become more popular nowadays for families celebrating Chinese New Year. The dish takes a long time to prepare. Man Fu Yuan’s Double-boiled “Fu Zhou” Buddha Jumps Over The Wall is a time honoured dish resplendent with delicacies like whole abalone, sea cucumber, fish maw, dried scallops, goose web and panax ginseng, cooked over low heat for 48-hours to gently coax all the nutrients out of the ingredients, creating a luxuriously thick broth rich in flavour. It comes in a $688 set (serves 5 pax) that includes Yu Sheng and Wok-fried Glutinous Rice.

I love Man Fu Yuan Deluxe Treasure Pot which is most ideal for family reunion dinner. It is filled with 25 premium ingredients such as whole baby abalone, sea cucumber, fish maw, goose web, scallops, and preserved meat sausage, and a new ingredient – Boston lobster symbolising good fortune and strength – all arranged layer by layer and enriched in a savoury broth.

If you wish to have a premium steamboat at home, Man Fu Yuan’s selection of premium steamboat ingredients are fresh and good. These includes handmade specialities such as Fresh Crab Meat Shrimp Ball, Minced Beef With Water Chestnut Ball, Sea Moss Dace Fish Ball, Fresh Prawn Dumpling and Dried Oyster Minced Pork Ball (all $18 for six pieces), ideal for the quintessential steamboat reunion feast at home.

Man Fu Yuan Stuffed Glutinous Rice in Whole Suckling Pig ($488, serves 5 pax) is a good set to buy for a CNY gathering. It has a lovely crispy skin.

Last but not least, a pampering Double-boiled Superior Bird’s Nest in Coconut to complete the fine dining experience.

Man Fu Yuan has a selection of auspicious menus ranging from $108++ per person for a 6-course vegetarian set, and $118++ to $668++ per person for a six-course set menu. For bigger gatherings, menus start from $628++ for a 6-course menu for tables of 5, and $988++ to $5388++ for tables of 10, available from 17 January to 14 February 2014.

Their take-home set menus, with choice of 6-course prosperous or vegetarian set at $198+ for five persons, comes complete with Yu Sheng and other delectable dishes, ensuring a memorable reunion meal, so the only thing you have to do is sit back and celebrate.

Man Fu Yuan is definitely one of Singapore’s finest Chinese restaurants. It has a wide range of festive dishes perfect for celebrations at home and they do most of the cooking for us.
