It feels great to have friends living near to each other. I am so glad to be living near Chiew Mei because whenever she bakes something, she will include my share. Her Streusel Topped Banana Cake which she baked for me during my previous operation made me a happy girl.
After my second dental operation, the sweet lady invited me to her house for brunch when she made super fluffy pancakes! Adapted from All Recipes, this pancake recipe creates super tall and fluffy pancakes. I prefer to eat it plain with maple syrup but you can choose to top it with strawberries and whipped cream.

Fluffy Pancake Recipe
Ingredients
3/4 cup milk
2 cup buttermilk
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2 tablespoons butter, melted
Directions
1. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
2. Whisk egg and butter into buttermilk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
3. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface.
4. Flip with a spatula, and cook until browned on the other side.
