Fragrant Yam Rice

材料:
香米 600克
虾米 50克
芋头 300克
三层肉 150克
红葱头 5粒
芫荽 适量
葱 适量
蒜茸 1大匙
清水 850毫升
炸香葱头片 2大匙

调味料:
鸡精粉 ½大匙
盐 ¼茶匙
糖 1茶匙
酱油 ½大匙
胡椒粉 ½茶匙

做法:
1。 米洗净,沥干水份;虾米浸软;芋头去皮,切丁;三层肉洗净,切丝;红葱头去皮,切碎;芫荽切段;葱切粒。
2。镬中烧热3大匙油,爆香红葱头和蒜茸后,加入虾米、肉丝及芋头炒香。
3。接着放入香米炒匀,加入调味料翻炒。
4。将全部材料放入电饭锅,加入清水拌匀,把芋头饭煮至熟,最后撒上葱、芫荽及炸香小葱头即可。

Ingredients:
600g fragrant rice
50g dried shrimps
300g yam
150g pork belly
5 cloves shallots
some coriander
some spring onion
1 tbsp minced garlic
850ml water
2 tbsp fried shallots

Seasonings:
½ tbsp chicken seasoning powder
¼ tsp salt
1 tsp sugar
½ tbsp dark soy sauce
½ tsp pepper

Method:
1. Rinse rice then drain. Soak dried shrimps till soft. Peel yam before cutting into dices. Rinse pork belly and cut into shreds. Peel shallots then mince well. Cut coriander into sections and chop up spring onion.
2. Heat up 3 tablespoons of oil, fry shallots and minced garlic till fragrant then add dried shrimps, meat shreds and yam. Fry well.
3. Put rice in and fry evenly. Add Seasonings and continue to mix well.
4. Pour the entire dish into an electric rice cooker, add water and blend well. When the yam rice is cooked, sprinkle spring onion, coriander and fried shallots on top before serving.
