From 2 February to 1 March 2015, Italian Executive Sous Chef, Christian Frigo, presents an enticing Italian Business Set Lunch at Pool Grill. Available in a superb three-course meal, the traditional-meet-modern fusion menu changes weekly.

A quiet moment is difficult to find in an active city as busy as Singapore, much less at the core of it. Set against the backdrop of Marriott’s swimming pool, this trendy al fresco restaurant will take your breath away with appetisers such as Beef Carpaccio with Parmesan Cheese, Cacciucco Ligurian Style Seafood Broth, Poached Veal in Tuna Sauce or Cauliflower Cream Soup with Hazelnut Butter and Scallop Tartare. We had a famous Italian classic – Veal Tonnato with Caper sauce. Served cold, the delicate slices are served with caper sauce, which imparts a contrast of textures and flavors.

Palate pleasing main courses comprise of Bread-crusted Lamb Loin, Acquapazza Style Sea Bass with Potato Cream & Gnocco Fritto, Braised Beef Cheeks with Red Wine, Slow Cooked Pork Shoulder with Fennel Confit & Marsala Sauce, Grilled Stuffed Squid, and more. I am impressed with their Acquapazza Style Sea Bass. The term acqua pazza (which means crazy water in Italian), tender and light sea bass filets are poached in a simple broth that is both delicate and full of flavour.

Not to be missed are desserts such as Soft Panna Cotta with Chocolate Crumble & Strawberry Compote, Ricotta Cheese Flan with Raisin & Orange Sorbet, Classic Tiramisu, Amaretto Semifreddo with Chocolate Sauce, and more. Of course, I went for the luxuriously creamy classic tiramisu. The mascarpone was smooth and light, adorned with sprinklings of cocoa powder.

Not in the lunch menu, I ordered a serving of Caesar Salad ($19) as it is prepared, tossed and served, right at the diner’s table. You can choose to add grilled prawns, smoked salmon or grilled chicken breast.

Pool Grill is great for business meetings or relaxing lunch gatherings with colleagues.
