Kueh Jagung

Whenever I walk past Bangawan Solo, I would always buy a Kueh Jagung (Sweet Corn Cake) for dessert. My aunty used to make it when I was a kid but she stopped doing it for a long time.

Last Sunday, while she was at home and I was recuperating from my sprained ankle, my lovely Aunty decided to make Kueh Jagung for me again. Kueh Jagung is one of the easiest dessert to make. It takes less than 15 minutes to prepare and if you can, buy banana leaves to wrap it up so that it is more fragrant.

Kueh Jagung

 

Ingredients
1 pack Mung bean flour (100g)
5 cups of water
1 coconut, squeeze juice
100g sugar
1 pack of banana leaves
1 can of sweet corn, remove the extra water
 
Method
1. Cut the banana leaves into rectangular size. Wash and boil to soften the leaves.
 
2. Mix all the ingredients (except sweet corn) together. Bring to boil.
 
3. Add in sweet corn and mix well.
 
4. Scoop a few tbsp of the mixture on a banana leaf and fold it to your desired shape.
 
5. Allow it to cool before putting it in the fridge to chill. Serve chilled.
 
Kueh Jagung
 
You can replace the sweet corn with banana or any other fruits. Hope you enjoy the Kueh Jagung as much as I do.
