Recipe : Pumpkin Rice (in support of Food Revolution Singapore)

Pumpkin is a versatile vegetable which can be cooked in many ways. You can stir fry it, make cakes out of it, steam it or even bake a cake with it.

For my family, we would always cook a big pot of pumpkin rice and eat it for dinner. This is a hearty and slightly sweet dish where the sweetness of the pumpkin will be fully absorbed by the rice. If you like pumpkins, you should try this.

Here’s my pumpkin rice recipe:
Ingredients (for 6 pax)
3 bowls of rice, pre soaked in water
1 pumpkin, cut into cubes
150g of pork belly, cut into small pieces
5 pieces mushroom, pre-soaked in hot water to soften it, remove stem and cut into thin strips
50g dried prawns, pre-soaked in water for about 10 minutes
5 shallots, sliced finely
5 garlic, sliced finely
4 tablespoons palm oil
some Sow thistle vegetables
some light soya sauce
some pepper
some salt
Method
1. Fry garlic and shallots in oil till golden brown.
2. Add in pork belly, mushrooms and dried prawns.
3. Add in pumpkin cubes. Continue stir-frying for another 2 minutes till it becomes aromatic.
4. Add in rice and seasonings. Mix well.
5. Transfer all the ingredients into a rice cooker. Add in water to completely cover the pumpkin rice to about 1cm above the surface. Turn on rice cooker and allow it to cook till done.
