Recipe: Steamed Prawn with Minced Garlic

我不是厨师,也不是家庭主妇。如果要煮晚餐,我会做方便、简单又好吃的佳肴。
星期天煮了“蒜茸蒸大虾”(Steamed Prawn with Minced Garlic),煮这道菜的方法很多,可以和蒜蓉一起蒸、可以拿去炸、可以配面一起炒等等。可是,懒惰的我,希望步骤不要太多、不要太复杂为妙。
这盘“蒜茸蒸大虾”只需15分钟就能完成。除了需要需用新鲜的大虾,花雕酒也扮演着重要的角色。朋友们都很喜欢这道菜,希望你也会在家尝试!

蒜茸蒸大虾(4人份)

用料:

大明虾8只
蒜头8瓣,剁碎
青葱2棵,切粒
芫荽1棵,切碎

调味料:

花雕酒少许
番茄酱少许
胡椒粉少许
糖少许
盐1/2茶匙
上汤4汤匙

做法:

1. 把大明虾去头留尾,除沙肠,洗净后用刀与背中央开小口,把虾尾从此处穿过,使虾尾向上。
2. 把虾摆放盘上,入锅蒸上5分钟后取出。
3. 爆香蒜茸,加入调味料煮滚,以生粉水勾芡后淋在蒸虾上,撒上青葱和芫荽即可。

Steamed Prawn with Minced Garlic (for 4 pax)

Ingredients:

8 prawns
8 cloves garlic, minced
2 stalk spring onions, sliced
1 stalk coriander leaves

Seasonings:

some Chinese cooking wine (hua diao jiu)
some tomato sauce
some ground pepper
some sugar
1/2 tsp salt
4 tbsp stock

Method:

1. Remove head from prawn but leave the tail intact, remove veins and rinse. Cut a small hole at the middle of prawn’s back using a knife, pull the tail into the hole until the tail is facing up.
2. Steam the prawns for 5 mins.
3. Stir-fry minced garlic until fragrant, add seasoning and bring to a boil, thicken with cornstarch mixture. Pour onto the prawns. Sprinkle with some spring onions and coriander leaves and serve.
