Saha Signature Indian Restaurant & Bar – Not Your Classic Indian Fare

This is an unforgettable dinner.

Judging for RAS Epicurean Star Award 2014 brought me to this new and modern Indian restaurant amidst the traditional shophouses of Duxton Hill. Opened by celebrity chef Abhijit Saha, the 42-seater establishment serves up Indian flavours with a modernist twist.

We may not be familiar with Chef Abhijit Saha, but in India, he owns two famous restaurants in Bangalore — modern European Caperberry and Mediterranean restaurant and bar Fava. He also picked up Best Chef in India at the Indian Restaurant Congress & Awards 2013.

The friendly staff saw that we were totally clueless what to order, so suggested us to try their tasting menu (non vegetarian $98).

I was totally not expecting something like this to appear in an Indian restaurant. Honestly, I thought I was here to have some good naan and butter chicken. But what’s in front of me are small globules in a spoon. The last time I had something similar was liquid form xiao long bao by Bo Innovation. It’s molecular gastronomy, wow! The globules contain a tamarind/spice and mango-ginger gel. I excitedly put it in my mouth and the “bubbles” burst, releasing the flavours.

Coiled around tender chicken meat, Makhmali Chicken Spaghetti came together with a pot of aromatic chicken and almond soup that will be poured over by the staff.

Foie gras is probably something you would not associate with the Indian cuisine. Kasoori Methi Seared Foie Gras is marinated with fenugreek leaf and topped with stewed mango, mango salsa and mango panna cotta.

Making good use of the spices, Fennel & Tumeric Grilled Jumbo Prawn is served with Amritsari baby potatoes, garlic raita and tomato chutney.

Lamb preparation is not easy. Kakori Lamb Roulade has the meat sou-vide till tender and served with couscous pulao, date chutney and sweet maple wood smoke. It was outstanding and simply melt-in-your-mouth.

For dessert, we have rich chocolate macaron with cardamom, saffron soil and mint soil.

Food is excellent. The staff is warm and knowledgable. What more can I ask for. The service crew are all attentive and it certainly made our dining experience a memorable one. And Saha, has definitely showed me the vast world of Indian cuisine. Congratulations for winning the best new restaurant award at RAS Epicurean Awards 2014, you guys truly deserve it!
