Believe it or not, this is my first time stepping into Tiong Bahru Bakery. I am not exactly an avid cafe hopper (as you can see from the limited cafe posts I have in this blog) but I usually like to hold meetings in cafe because of the comfortable atmosphere. Founded by master baker Gontran Cherrier and operating under the Spa Esprit Group, Tiong Bahru Bakery is an artisan bakery that serves coffee and a wide variety of freshly baked premium quality breads and pastries.

I know Tiong Bahru Bakery is famous for its croissant. My friends bought it for me a few times and I enjoyed it. Since I am here already, I must try it fresh in the bakery itself. Indeed, this tastes so much better than many other bakeries which are supposed to be famous for their croissant. It’s buttery and light, with very crispy and flaky skin. First bite onto the croissant, you get a chewy yet soft texture. I don’t need other fillings for the croissant.

But other than that, I am totally clueless which one should I order. Thankfully, the service staff gave me a few suggestions so I picked the original flavour of Kouign Amann. Made with bread dough containing layers of butter and sugar folded in, similar in fashion to puff pastry, this golden brown pastry is crunchy with sweet caramelised texture. It’s buttery without being too cloying.

We also had the Mozza & Ham Focaccia ($8) which to me, is just a plate of very colourful breakfast. Perhaps because I am not a fan of focaccia. It’s dense, dry and not much taste, so the rocket and smoked ham on top are really meant to add some flavours. On the first few bites, it was still okay. But I don’t think I can finish the entire focaccia by myself.

I don’t mind going back for a quiet brunch (for their croissant), but definitely not the weekends. Happy to know that they are opened on Monday – perfect!
