Whenever we order a plate of duck rice in hawker centres, what we get is usually the roasted duck or the braised duck. But in Sembawang Hill Food Centre, I found a stall that sells traditional Hokkien duck.
 
Ah Ee Traditional Hokkien Salted Duck
For some locals, they don’t take duck rice as they can’t stand the ‘duck smell’. So alot of hawkers tried to cover the smell by roasting it or marinating it with soy sauce.
 
However, Ah Ee Traditional Hokkien Salted Duck (亚一传统福建咸鸭) was marinated with salt, ginger, star anise and some other secret ingredients to bring out the flavour of the meat. You don’t get the black colour duck skin here, what you get is the original yellowish colour of the skin.
 
The owner Mr Zhuo (65 years old) started learning to cook salted duck rice from his mother when he was 12 years old. Having felt that many traditional food were disappearing, he decided to venture into this business 4 years ago.
 
Ah Ee Traditional Hokkien Salted Duck
Mr Zhuo imported the ducks from Malaysia, and the first bite, you can actually taste the fragrance that comes from the meat itself. Although it is called traditional hokkien salted duck (纯福建式的白煮鸭), the saltiness of the meat is just right.
 
Some may find the meat tough but I felt the salt intensifies the flavours of the meat, giving it a firm texture. No MSG is added. If the meat is too plain for you, be sure to dip into their chilli sauce. Mr Zhuo created its own chilli recipe, with garlic, lime and chilli added, gives it a refreshing taste.
 
Mr Zhuo is ver particular with all the ingredients used, even the rice and noodles are of good grade. Each plate of rice costs $3.50.
