The well-known “Ah Hui Big Prawn Noodle” from Longhouse along Upper Thomson has moved to Balestier Market (beside Boon Tong Kee). I decided to pay a visit during lunch last week. Ah Hui has definitely expanded. They used to only have a prawn noodle stall in Long House, but now, they have another 2 stalls that sells carrot cake and fish ball noodles (by the way, their fish rolls are excellent).

Customers can choose to have their noodles in the soup or opt for a dry version. They use Angka prawns where the meat are firm to the bite and their freshness comes through. The prawns are blanched in this soup when orders are placed, giving it the subtle taste of the crustaceans.

The mildly spicy soup is made from scratch every morning with prawn heads and shells. It is very garlic loaded, some of us thought it could be more prawny and robust.

Having said that, it is still very satisfying. Plus, I don’t have to queue for an hour like other popular prawn mee stalls. The noodles is tossed with aromatic chilli sauce. The shiok factor is the generous sprinkling of crispy lard cubes and fried shallots.

Ah Hui has also come up with a golden pancake dish which taste similar to our usual deep fried prawn cakes. Using sea prawns that are hand peeled and minced pork, fresh chestnuts are added and pan fried till golden brown. It’s a chunky layer of meatiness and has been well received by many customers since its launch. In addition, if you are not a big fan of oysters but would love to eat a plate of orh luak, the stall also cooks hei luak (oyster omelette). Same same texture, the batter is not too floury!

There is certainly some good food on offer at Balestier hawker centre, I will be back to conquer more of them.
