Brasserie Les Saveurs – New Chef, New Menu

Brasserie Les Saveurs, the signature restaurant of The St. Regis Singapore, offers all-occasion dining opulent surroundings to provide a luxurious setting for the evolving nuances of each meal. With a new Chef de Cuisine in the house, the restaurant has crafted a new a la carte menu featuring brasserie-style contemporary French indulgences.

Our lunch started with an amuse bouche which is a piece of grilled waygu tenderloin skewer in a cup of potato and soy espuma. The espuma is light and tasty when paired with the flavourful beef skewer.

A colourful presentation of Salade Niçoise (S$36++) consists of black pepper seared yellow fin tuna, musclun leaves, quail eggs, marinated anchovies, green beans and Kalamata olives. That is a huge bowl of greens! I like the seared tuna which is just lightly seared on the outside. But unfortunately, the marinated anchovies is too fishy for me.

Then, we had a flavourful plate of Fisherman’s Seafood Stew ($19). It is slowly simmered with fennel and saffron and you can taste the richness of the seafood stew with a generous portion of prawns, fish, clams and mussels, paired with Croutons and saffron rouille. In fact, I enjoyed the stew alone without the aioli and toast as it is already yummy enough.

For lobster lovers, you can probably try the Boston Lobster ($75) flamed with cognac, mushroom bechamel sauce and gratinee gruyere. The lobster is sooooooooooooooo huge lah and it filled up the whole plate! The meat is well coated with lots of cheese which, in my opinion, is too creamy and kinda overshadowed the sweetness of the lobster meat. I preferred the claws which are deep fried.

Though I was already very full, especially after the creamy plate of lobster, I couldn’t say no to the Australian Beef Prime Rib carved from Gueridon Trolley ($48) especially when you have such a handsome chef who did the carving at our table. Such an eye candy right! You can tell the chef how well you want your beef to be done. I choose mine medium rare, hence you will still see the slightly more pinkish meat on my plate. Drenched with a lovely brown sauce, it truly complements and enhances the tender and juicy meat.

My dessert is Banana mousse cake and apricot compote, mango salsa, banana and ginger ice cream ($14). I really really like the banana mousse cake which reminds me of Tokyo banana cake, airy and light with sweet tender banana taste.

The new menu at Brasserie Les Saveurs looks promising, serving up contemporary French cuisine. Dining at Brasserie Les Saveurs is always an enjoyable affair, classy interior with full glass windows which allows me to enjoy the waterfall while enjoying my lunch. Of course, the company plays a big part too.

Brasserie Les Saveurs offers business lunches, vibrant after teas and extraordinary dinners all day. Its JJ Business Lunch Experience is priced from $48++ from Monday to Friday (12pm to 3pm) where you can enjoy a delicious spread of main courses, hors d’oeuvres, desserts and fine cheeses. Not forgetting the afternoon tea (from 3pm to 5pm daily) where you can enjoy a wonderful tea spread on a three tiered silver stand, scone bar and dessert buffet at $46++ per pax from Sunday to Friday and $56++ per pax on Saturday (including tea dance).
