What make you go back to the same hawker stall? I am sure most of you answer will be the same as mine: good food.
 
But sometimes, the presentation of a hawker dish may not look as delicious as it may be. Just like a bowl of fish soup, what you see may be just a few pieces of fish, but the essence may be in the flavour of the soup which cannot be “expressed” as vividly in a photo.
 
As a friend mentioned, we can’t really bring studio lighting to a hawker and take professional shots of hawker food. I mean, we can still do it, but the photo will somehow lose the soul because styling a hawker dish too much will simply be a misrepresentation of what it really is.
 
So to me, the most difficult aspect in shooting food, is the hawker photography.

I came to Jalan Berseh Food Centre last week to try out the different famous dishes in the hawker centre. Of course I did my research and I knew immediately which stall to target when I reached there. One of them is definitely Coffee Hut.
 
The owner of Coffee Hut has an interesting background to begin with. He got retrenched a few years back and decided to pay $3000 to a hainan coffee master to learn how to make kopi. He was definitely a hardworking student because the coffee he made is one of the best coffee around. It was very thick and the aroma of coffee beans was evident.
 
I always thought all kopi in the coffee stall would taste similar, diluted and bland, with no coffee aroma. It was when I met a aunty who used to work in a coffee stall, she made me the best coffee that I have ever tasted, it was then I realised kopi can taste so good!
 
Coffee Hut kaya toast bread
 
I think our coffee culture has evolved tremendously over the years. There are more and more cafes opening up, and coffee stalls in hawker centres have also been improving themselves to keep up with the market.
 
This stall first caught my eye because the stall front is different from the other coffee stalls in the hawker centre. And the kind of toast bread they serve, is just so similar to the ones like Toast Box and Yakun, but at a cheaper price of course.
 
To me, the presentation of the stall and the look of the bread is special. But to others who hasn’t been to this place and who only looked at my photo, they felt my photos weren’t convincing and didn’t look as great as I described. Looks like I have more to learn to make this photo look special.

If my photos do not look convincing enough, let me tell you straight, this is one of the best coffee I have tried in a hawker centre.
 
They also made their own kaya and peanut butter sauce which can be spread over the toast or their toasted baguette. Their baguette has a very crispy skin.

Coffee Hut doesn’t serve half boiled eggs during lunch time, which was a pity. So I only had toast and coffee.
