Revel in Summer’s Bliss at Putien

Putien (莆田) has won the hearts of Singaporeans with reasonably priced yet distinctive namesake delicacies of refreshing flavours and an emphasis on fresh, seasonal ingredients. I am a big fan of the restaurant because they never fail to serve homey and healthy dishes from Putien.

Starting 1st June, Putien ushers in a blissful summer with a 5-course menu consisting of two starters, two main courses and a dessert drink centred on delightful summer harvests. Let’s indulge and beat the heat with these dishes!

Putian Style Egg Plant ($4.90) is diced and slow-cooked at low heat in a special rice broth to perfect tenderness, then topped with a special homemade sauce. I am very surprised that the eggplant is still white in colour because I thought it will turn brown when exposed to air. But chef told me a tip, that is they put the eggplant in rice broth to prevent it from turning black, then they cooked with sesame oil, soy sauce and garlic. Good tip for those who loves cooking!

Don’t be mistaken. This is NOT a hamburger. It looks like a hamburger, but it is actually Pan-fried Tomatoes with Minced Pork ($3.90/pc). It has minced pork tucked between slices of summer-kissed tomatoes, gently seared within a thin crust of egg. The minced meat is only slightly marinated in soy sauce.

My favourite dish for the night is Sauteed Sea Snails ($13.90). These sea snails are imported from Pu Tian twice a week. They are simmered to flavourful succulence in a delicious broth with spring onion, chilli and some sugar. All you have to do is to put one sea snail into your mouth, suck it to “absorb” the flavours. An authentic taste of Putian cuisine, not to be missed.

What I like about Putien is that, no MSG is added into their dishes. Especially for vegetables, they just add a bit of seasonings to you can taste the original flavour.

We all know winter melon because our mothers will always used them to prepare soup. But this time, Putien does things a lil different. The Braised Winter Melon ($9.90) has juicy chunks of winter melon fried to light golden crispiness, then drenched and braised in a collagen-rich stock of Hua Diao Wine.

End your meal with Grandma’s Bayberry Tea ($3.90), a refreshing Chinese Bayberries (杨梅) drink packed full of vitamins and anti-oxidants. As the fruit has a very short shelf life, and often attracts insects, the old grandmothers in Pu Tian will soak the fruit in saltwater and drink it as a juice. Hence, the chefs in Putien fermanted the fruit with sugar and sugar, and offered as cold summer drink.
