Sky on 57 – Must try their Foie Gras Xiao Long Bao!

What’s the best way to make Monday less blue? Go for a good meal, of course!

A friend treated me a business luncheon at Sky on 57 last Monday because he loves Foie Gras Xiao Long Bao so much that he wanted to eat again.

With panoramic views of the city’s skyline, Sky on 57 boasts modern Asian cuisine created by acclaimed Chef Justin Quek. Chef Justin Quek was once trained at some of France’s top kitchens, including Roland Mazere’s Le Centenaire in Perigord. He was also the first Singaporean to be appointed personal chef of the French Embassy, and inaugural recipient of the Chef Of The Year award from World Gourmet Summit Awards Of Excellence.

The menu here is Chef Justin’s modern interpretation to the comfort food that he grew up eating. Using his European techniques, he creates a modern version of homegrown cuisine, hoping to bring out the best of both worlds.

It took a while for our Foie Gras Xiao Long Bao (Additional $8) to arrive but it was definitely worth the wait. Once it was placed on the table, the truffle smell lingered. The marriage between foie gras and truffle in the meat patty is simply irresistible. When you bite into the neatly folded xiao long bao, the warm savoury juice simply gushed into the throat and I let out a loud “oomph!”

A good harmony between truffle and foie gras, nothing too overpowering within that mini skin. Not long after, I cleared all my 5 xiao long bao. I am obsessed. I want to come back to eat again!

After the yummy xiao long bao, King Prawns Capellini “Marco Polo” (Additional $6) followed suit. It is a clean and light rendition with the use of thin egg pasta and chunks of king prawns.

Dessert was classic Apple Tart Bourdaloue where a thin crust was complimented with tangy home-cooked apple filling.

Sky on 57 also has a bar, lounge and an al fresco area for those seeking out pre-dinner drinks or late-night cocktails.

Dining at Sky on 57 at the Sands SkyPark is like feasting on top of the world. If you are coming for dinner, get an outside table to enjoy the great view and scenery.

Business luncheon costs $50 for 3 courses or $60 for 4 courses.
