Anyone of you still remembers Cross Way Bay Hong Kong Roasted Meat (尖沙嘴港式烧臘) in Tampines? Many of us foodies including Seetoh were raving about its biscuit-like siobak that gives out a sexy crackling sound when we bite it. This stall has closed their shop in Tampines and they have really crossed the causeway to… Malaysia! And it has been renamed as Tong Tong Hong Kong Delicacy 糖糖美食方.

Owner Martin Ong used to work in western food stalls before he decided to start his own business in roasted meat. I think he has got the right formula for that roasted meats.

The meat from the blanched and roast chicken (RM$5/pax) falls off the bone easily (even the skin also falls off). But it is soooo soft and tender. The char siew, however, fell short of expectation on our day of visit.

Now here we come to the star of the show – SIO BAK! The only challenge with sio bak is getting the skin crispy enough. You really want it to be really brittle. I am glad that Tong Tong has maintained its standard thus far – it’s super crispy, dry and tastes like biscuit. You can literally hear the crackling sound when you bite the skin before it gives way to the juicy layers of well-seasoned tender and moist meat under it. Martin said that he actually blanched the meat before roasting it. From the side view, you can clearly see the different layers of meat. All these elements explode together in each mouthful. Oh mine… so sinful yet so good!

They also serve noodle dishes such as wanton mee (RM$7) and mushroom minced pork noodles (RM$7). Their egg noodles is springy and when cooked al dante, it has a satisfying crunch which paired well with the char siew and slippery dumpling. I suggest doing for the non-chilli version and let the cook toss the noodles in flavourful oil. You can also try the hor fun with mushrooms and minced pork.
