Since 1989, founder of Top 1 Home Made noodle started making handmade noodle with wide variety of soups, sides and noodles. I got to know the stall from my crazy girlfriend who would visit the stall almost every weekend just to get her mala mee craving fixed. After the opening of Downtown Line (DTL2), travelling to Bukit Timah just to have a bowl of mala mee becomes so much more convenient!

Uncle Zhuang learnt the skills from his friend and fine-tuned it to make it better. Now, the menu has so much permutations that it may become confusing to order for first-timers. So to help you a little, here’s what you need to do:

1) Order the type of noodle you want to have (fine? flat? mee sua? beehoon? etc)
2) Choose the type of soup to pair with your noodle (Clear Soup? Tomyam? Hot & Spicy? Dry?)
3) Pick the types of ingredients to go with your soup (prawns? meatball? sliced fish? fish maw? abalone?)

It was raining during our visit, so it seems slurping on piping hot noodle soup is the best way to keep ourselves warm. Somehow, the bowl of cloudy ikan bilis soup is super satisfying because it has been boiled for hours. I added fish maw and the girls love it.

The dry noodles are coated with dark sauce. I like how palatably chewy the noodles was. The soup version might have been a wider choice for side ingredients but if you are game to try their chilli, you must order this. The kick only comes in when you add the killer chilli sauce and toss it again. It leaves us breaking out in sweats and burns out lips.

If you are game for something spicy, go for the hot & spicy noodles or tom yam noodles. I used to love their hot & spicy noodles which is not for the faint-hearted. The first mouthful made us nearly cry, but after all those heat, it left us (or rather, me) wanting for more.

However, this time around, I prefer tom yam noodles. The heat is more bearable with distinct hot and sour notes. I can finish the whole bowl of delicious soup! Uncle Zhuang basically prepares a soup base every morning and adds chilli paste into the broth upon order.

After trying all the noodles, Uncle Zhuang came over and said he wants to prepare the “Special Treasure Soup” for us. Thankfully we didn’t reject him because this is so good! The clear broth has that subtle crustacean flavour from the prawns and fish maw.
