Hoo Kee Bak Chang
Hoo Kee is probably the most famous traditional Hokkien Bak Chang in Singapore. This heritage shop has been receiving Bib Gourmand status in the MICHELIN Guide Singapore for the past few years.
Each dumpling is filled with a satisfying soft glutinous rice with savoury meat and crunchy chestnuts, the dumplings are expertly wrapped in fragrant bamboo leaves and cooked to perfection. The ingredients are all top-quality and carefully selected – top grade AA glutinous rice from Thailand, the best cuts of meat, salted duck eggs specially imported from Vietnam or China, plump and moist Shiitake mushrooms.
The shop offers four types of Hokkien-style rice dumplings or bak chang — Original, Salted Egg Yolk, Mushrooms and Deluxe, an all-in-one version that comprises salted egg yolk and mushrooms. Kim Choo Kueh Chang
Mention nonya dumplings and people will instinctively come up with the name Kim Choo Kueh Chang. Since 1945, this Joo Chiat favourite has been producing some of the island’s most loved sticky rice dumplings.
The Nonya bak chang is a creation unique to this region. While traditional rice dumplings are meant to be savoury, the Nonya dumpling ($4.50) is sweet, because they use wintermelon. It is stuffed with a filling of minced pork, mushrooms, and candied winter melon stewed; and wrapped in bamboo leaves that lend the dumplings a distinct fragrance. They also offer Traditional Salty Dumpling with ($5.50) or without salty egg ($4.50). Mini dumplings are available too.
