Billion Bowls – Ex-Mikuni Chef Crafts Delicious Japanese Donburis in MacPherson

When it comes to Japanese food, prices aren’t necessarily the most wallet-friendly. Luckily, you don’t have to spend billions at the newly opened Billion Bowls in MacPherson.

Billion Bowls is created by Yong Kang, an ex-Junior Sous Chef at Fairmont Singapore’s Mikuni. As the COVID-19 Pandemic dealt a heavy blow to the hospitality sector last year, Yong Kang left in search of new opportunities. He decided to channel his decade worth of experience into his own Japanese stall with his wife, Yuri, in April 2021.

The husband-wife duo works in sync. As Yong Kang efficiently works the kitchen with a blow torch in hand, Yuri smoothly prepares the ingredients while providing hospitable service to the customers at the counter.

I ordered the chef’s recommendation, which is the Golden Sauce Chicken Don ($8.90). The chicken is hand-wrapped in a casing  with carrots and spinach before being sliced into coin-like pieces. The protein is then placed on a bed of fluffy white Japanese short-grain rice with shredded egg omelette and seaweed salad, before being topped with a generous amount of golden sauce that’s hand-torched till golden-brown.

To my surprise, the golden sauce was light and did not overpower the tender chicken beneath. However, the chicken itself could use a tad more marination.

I also ordered the Mentaiko Mayo Salmon Don ($7.90). The salmon was tender with a slight firmness. The torched mentaiko sauce slathered on top of the salmon was sweet and savoury, and highly addictive.
