Carousel presents Authentic Chinese Cuisine by Guest Chef Lau Swee Theen
Celebrity guest chef Lau Swee Theen from 8 to 19 April during lunch and dinner meal periods. Chef Lau Swee Theen brings to Carousel over 15 years of experience as the former Chinese Executive Chef of Wan Hao at Marriott Singapore and Chinese Master Chef at Marina Mandarin Singapore, Meritus Shantou China and Radisson Plaza Shanghai.
While specialising in Cantonese cuisine, Chef Lau is also adept in dishes with Sichuan, Shanghai and Teochew influences from his years spent in China. We had a taste of the buffet menu two weeks ago and tried some of Chef Lau’s signature items. Watercress Broth with Shredded Lobster & Scallop may look intimidating but the thick broth in superior stock is actually rich and tasty. Oven-baked Sea Perch Fillet with Chinese Chicken Ham offers soft and tender flesh and the flavours are instantly heightened with the coriander lime sauce.
Steamed Royal Chicken with Conpoy & Chinese Herbs was unfortunately too mild for my liking but my favourite is the Slow Braised Spiced Duck with 8 Treasures Glutinous Rice. Stuffed with flavourful glutinous rice, the braised duck was well seasoned and definitely worth a try. Last but not least, the chilled Mango Coconut Cream Custard with Coconut Sorbet & Durian Cream Anglaise is a sweet ending. I love the durian cream anglaise so much that I want to have a double serving! Other signature items include stir-fried claypot glutinous rice with oriental sausages, slow-cooked beef tendon and sirloin with white radish, and braised lamb shank with Chinese mushrooms.
The promotion in available from 8 to 19 April during lunch from 12pm to 2pm and dinner from 6.30pm to 9.30pm. Lunch is priced at $52++ on Mondays to Fridays and $60++ on Saturdays and Sundays. Dinner is price at $70++ on Sundays to Thursdays and $83++ on Fridays and Saturdays.
