记得“菜市面莊”(Chai Chee Noodle Village)在2001年于宏茂桥六道大牌727开张时,我需要排上30分钟买一碗面。几年下来,分店如雨后春笋般增加,“菜市面莊”还获得全民票选的“优选美食王”。
后来香菇肉脞面在本地越来越普遍,到处都可以吃到。上周三到宏茂桥的“菜市面莊”吃早餐,在几分钟内就买到了我的肉脞面。
出菜市的面,是正宗的潮州做法,调味的香醋和自制辣椒酱,与爽口的面条融成一体,入口开胃。而炸得香脆的扁鱼与猪油渣,让食客吃得开心。老板也用猪皮熬煮香菇,使香菇透着阵阵的油香和爽滑的口感。
“菜市面莊”的面条是特别从面厂订制,汤底每天须花10几小时熬制。而且碗里配料除了不可少的香菇和肉脞,还有肉片、肉丸、猪肝、生菜等等。
