Chef Sham H.K Vinegar Trotter and Fish Maw Pig Stomach Chicken Soup – Super Affordable and Rich Collagen Soup!

Chef Sham takes up two stalls armed with bright eye-catching signboards in Chinatown Complex Food Centre. Dressed in adorable uniforms, the staff dish out Chef Sham’s award-winning vinegar pork trotters and fish maw pig stomach and chicken soup which are value for money and greatly satisfying.

I had the Vinegar Pork’s Trotter 猪脚醋($6.80), Sesame Oil Chicken 砂锅麻油鸡 ($4.50) and Fish Maw Pig Stomach Chicken Soup 鱼漂猪肚鸡汤 ($6.80) with a bowl of white rice ($0.50). Everything was super affordable given their big portions and superb taste.

The vinegar pork’s trotter is a dish that is often associated with what postpartum moms have during their confinement period. Even so, this pig’s trotters dish is on a whole new level and you might just find yourself craving for it even if you’re not pregnant.

Although it’s a Hong Kong-style pig’s trotter, the recipe was tweaked to suit the tastebuds of locals. The taste of vinegar was robust, but the sweetness of the braised sauce helped to balance out the piquant flavours. Thankfully, I had white rice to go with this dish as the sourness of the vinegar got too strong for me halfway through the meal.

The pig’s trotters came in large chunks. The pig’s skin on the tender trotters had a very gelatinous texture and was easy to bite off. I would presume that it had been slow-cooked over long hours to achieve this texture.

The Sesame Oil Chicken is an underrated dish that deserves more attention. The tantalizing fragrance of the sizzling sesame oil was simply alluring. Although there was only one shiitake mushroom in this dish, it is enough to leave an impression as it was juicy and well braised.

The chicken thigh was extremely well seasoned and well braised too. The tender meat was coated in a luscious sesame oil gravy. For the best tasting experience, coat your chicken with a generous amount of gravy before every bite.

Last but not least, my top pick from this stall – Fish Maw Pig Stomach Chicken Soup. I will always remember it because it tasted so good!! The soup was boiled in a large commercial pot that had an old hen adorned with dried dates and spring onions balanced gracefully in the centre. It’s quite extra but I love how they are so unapologetically flamboyant.

The soup was served in a 燉盅 (dùn zhōng – porcelain stew bowl) that made me feel like royalty back in the Chinese dynasty era drinking some herbal soup; just that it was much better than herbal soup. This cream-white soup was one of the best soups I’ve had.

The full-bodied soup was extremely smooth. Although it was high in collagen, it didn’t leave a sticky residue on my lips after. The soup was not only highly nutritious, but it was also packed with lots of ingredients!
There was a generous amount of goji berries, fish maw, pigs intestine and chicken thigh. Everything was cooked perfectly, with nothing tasting too soggy or overcooked. The pig’s intestine was very clean!

This collagen soup is comparable to those that you have in Hai Di Lao or Beauty In a Pot but I would choose Chef Sham’s soup over those any day for its affordable price! Although the menu looks like it’s targeted at confinement moms, but the food is very tasty and makes an excellent choice for lunch any day.
