Yusheng (Chinese: 鱼生), or Prosperity Toss, also known as lo hei (Cantonese for 捞起) is a raw fish salad eaten during Chinese New Year. It usually consists of strips of raw fish mixed with shredded vegetables and a variety of sauces and condiments. Yusheng usually served as the appetizer due to its symbolism of “good luck” for the new year because “Yusheng (鱼生)” has the same pronunciation as “余升”, which means increase in abundance.
