Eat 3 Cuts - full pipa duck

As its name suggests, Eat 3 cuts serves up three different variations of meat — two types of duck and one type of chicken. Of the three, their signature would be the Pipa Duck. Think the shape of a Chinese Pipa but a butterflied duck instead. They also offer your typical Roast Duck as well as Soya Chicken.

I went in with the hopes of getting my hands on all three types of meat. However, due to the cut in supply of fresh chicken, they are not serving their soya chicken for now. Regardless, my dining companion and I managed to get our hands on their duck.

First up, we were recommended the Pipa Duck Noodles ($7) and this certainly did not fall short of our expectations. Slicing and spatchcocking the duck allows for a larger surface area to absorb the marinate and this undeniably made the meat a ton more flavourful.

The well roasted Duck meat was juicy, tender and had a firm bite to it while the reddish-orange skin retained its crispiness. They offer some sauces to pair with your meats and I chose to dip my Pipa Duck into the Sour Plum Sauce. Needless to say, this was bussin. The tinge of tartness from the sour plum helped to cut through the meaty taste of the duck. On top of that, the sweetness from the condiment also paired beautifully with the smoky flavours of the Duck.

The egg noodles were springy and slightly chewy, which held a nice contrast to the duck as they melded in my mouth. I suppose the noods were coated in some fragrant shallot oil which also took away the alkaline taste too!

Having enjoyed the Pipa Duck Noodles thoroughly, I couldn’t wait to dig into my a la carte order of the Pipa Duck Drumstick ($8). Unfortunately, there was not much to shout about. The meat had a tougher bite as compared to the ones I had with my noodles and there was far too much bone. As with drumsticks, the bone to meat ratio would not be ideal but I would have hoped for more tender meat.

Finally, we also opted for a bowl of their Roast Duck Rice ($6.50). Here, a portion of chopped roast duck sat on a bed of fluffy white rice. A drizzle of thin black sauce which had a slight herbal taste added some needed moisture to the entire dish.

Like the side of the drumstick I had, I wasn’t exactly vibing with this. The roast duck was drier and had a gamier taste. The skin was also chewier than I had expected. I added a dollop of their homemade chilli to my roast duck which gave a nice kick to it and drowned out the strong flavours of the duck.

Located within ARC 380 in Jalan Besar, this humble stall does have limited seating and I can only imagine how crowded it could get when the weekday lunch hour arrives.

All in all, there seemed to be more misses than hits, but trust me when I say I’ll be back for their Pipa Duck. They also offer whole Ducks which would be great for gatherings!
