With the recent facelift of Changi Airport Terminal One, there are more than 30 new F&B outlets. One of it is the internationally renowned brand, Fauchon.
The gourmet canapes bar has a luxurious seafood menu with a divine range of caviars alongside boutargua (mullet roe), lobsters, premium smoked salmons, oysters, king crabs, as well as a dining menu with breakfast and dessert items. Even if you are not on your way to Paris, you can still savour Parisian delights at Fauchon-Le Bar A Caviars!

Indulge yourself the way the Scandinavians do, with an open faced sandwich. The Scandinavian Sandwich ($12) is a classic combination of smoked salmon on toasted bread, accessorized with onions, boiled egg and olives. It gives you a sublime taste which is great of a light lunch.

Lobster bisque ($10) is a rich cream soup with seafood served with bread. One of the most important factors in the soup is the texture, which should be velvety and smooth. The texture of the soup base here is a subtle, nuanced beginning to a meal.

This classic Prawn Martini ($12) starter will never go out of fashion. The juicy boiled prawns are served with avocado salad and cocktail sauce, which make a fantastic cocktail-party nosh.

Poaching salmon one of the best ways to cook salmon as compared to baking or grilling as it retains the delicate nature of the fish. The Poached Salmon ($25) is served with boiled new potato, spinach and cream dill sauce. I find the poached salmon here a tad too dry though.

I think the most crucial thing about Seafood Marinara ($17) is the quality of the ingredients. Penne pasta with marinara sauce is served with a mix of seafood, prawn, squid and mussels. This authentic Italian dish melts in your mouth and warms your tummy.
