One quintessential Hong Kong dish is their unique cart noodles or che zia mian. Coined as the traditional HK fast food, cart noodles rose to popularity in the 1950s and got their name from mobile carts that vendors used to sell noodles from. Customers can build a bowl with their desired type of noodles and toppings, which will then be topped with a piping hot broth.

While you can’t find those carts on the streets in modern times, they can be found in small restaurants in Hong Kong. In Singapore, there are a few cart noodles shops — one of which is the newly opened Fei Gong Cart Noodle!

The hawker stall in a coffee shop in Marine Parade is easy to spot as it has a big illuminated signboard. Feng Gong Cart Noodle offers 20 toppings to choose from. Similar to our local cai fan, customers pick their choice of noodle, toppings, and sauce, which they fill out on a laminated order sheet. The staff will then put together your selections on the spot!

I went for the popular Pig Intestine ($2), Beef Brisket ($2.50), Fried Egg ($1), Picked Vegetable ($1), and Kang Kong ($1) with Thin Egg Noodles ($1.50). Their braised meats are definitely a must-have. I especially adored the tender beef brisket that had a good fat-to-meat ratio and their well-cleaned pig intestine! The thin egg noodles could have been springier, but the thick homey broth went well with the noodles.

Another bowl I ordered was with Chicken Feet ($1.50), Tau Pok ($1), Mushroom ($1.50), and Lettuce ($1) with Vermicelli ($1.50). Surprisingly, the chicken feet was full of soft tendons to munch on. The tau pok was the perfect choice to soak up the broth, and the mushroom was big and plump. I got the stall’s popular chilli sauce which gave the dish a nice kick.

You can also order the toppings as a la carte options to share. I got the stall-recommended Chicken Wing Tips ($3), which saw soft chicken skin doused in a spicy garlic chilli sauce. Be sure to come early or order it in advance as quantity is limited. I also got the Hong Kong classic Curry Fishball ($1) which saw  fishballs with a slightly crispy exterior covered in a light curry sauce. One of the best ways to round off the cart noodle spree is with a bowl of Radish ($1)! The vegetable was cut into thick chunks and carried a light sweetness.
