Flipper’s Singapore – Japan’s Famous Souffle Pancake opens on 6 November 2020!

I know the pandemic is far from over and leisure travel is not possible at this moment. I was just reminiscing our holiday memories with my husband and we really miss Hong Kong. And we receive the news today that one of Japan’s most beloved and iconic pancake chains, Flipper’s, has opened a flagship store at Takashimaya Shopping Centre.

I AM SO EXCITED OKAY!

This iconic Japanese pancake chain started in Tokyo in 2014 and has become a cult favourite that trailblazed the soufflé pancake trend in Japan and around the world. They have also opened in New York, Hong Kong, Taiwan and Seoul. I love it so much that I think I ate twice in Hong Kong and once in Japan.

It takes about 25 minutes to make the pancake on custom-made griddles from Japan with precise temperature control. . Their ingredients are weighed and measured down to a single gram to achieve that perfect balance of taste and texture. If you look closely at their open kitchen, you will realise they do not use any pancake ring mould! The pancakes are expertly flipped to get that beautiful golden-brown top and bottom.

Flipper’s Singapore uses Hinata eggs from Kanagawa prefecture. The eggs are raised under pristine conditions by the Tanzawa mountain range, hence giving the souffle pancakes an airy and delicate consistency. They also uses Japanese Kitahonami flour milled from Hokkaido wheat.

If you have never tried Flipper’s before, I recommend you to go for Kiseki Pancake Plain ($16.80). The pancakes are irresistibly fluffy and pillow-soft with a melt-in-your-mouth texture. They are served with maple whipped cream which adds a subtle flavour without overpowering the aromatic pancakes. They are so delicate that they are served with two forks as part of Flipper’s signature experience.

Other pancakes we tried includes the Kiseki Pancake Matcha ($19.80) and Kiseki Pancake Hazelnut Chocolate ($21.80). The former presents the quintessential Japanese pairing of matcha and red beans, while the latter is topped with chocolate-infused cream, luscious hazelnut praline and caramelised bananas. They also serve Kiseki Pancake Fresh Fruits ($21.80).

I thought it would be weird to have savoury pancakes but the Eggs Benedict Souffle Pancakes ($22.80) which I tried is pretty decent. One is paired with grilled prawns and avocado cubes, while the other is served with Norwegian smoked salmon and spinach. The pancakes are served with poached eggs and a generous lashing of Hollandaise sauce.

Opening special! From now till 30 November, you can get this special edition Millennial Strawberry ($20.80). Sweet and tangy Chitose strawberries and velvety cream cheese is sandwiched between the pancakes cloaked in strawberries-blended cream. It tastes similar to strawberry shortcake!

The menu is pretty small as of now but I am looking forward to their seasonal specials featuring fresh Japanese fruits such as Yubari melon, white peach and Shine Muscat grapes.
