Flying Dragon Noodles – Floating Noodles in Pasir Ris Central Hawker Centre

Tucked away in a corner on the 2nd floor of Pasir Ris Central Hawker Centre, Flying Dragon Noodles takes your typical Chinese crispy noodles to another level. No, literally, the golden brown fried noodles are floating.

After snapping some shots of their signature Flying Dragon Noodle ($6), I tucked into the perfectly crisp noodles doused in a piping hot sauce. They deep fry Hong Kong-style egg noodles because it’s less brittle than other types.

Gimmicks aside, the noodles were more than just an Insta-worthy dish. Even when soaked in the sauce, the noodles still had a firm bite. The slight alkaline taste was also balanced out by the thick egg gravy, making each mouthful rather inviting. A generous portion of tender pork slices, sliced fish cake, vegetables and prawns made the entire dish complete.

Their Flying Dragon Noodles also come with Prawn and Lala ($9) or Crayfish ($16), for those looking for more premium options. Both of these come blanketed in their Chilli Crab Sauce.

I have had really good white beehoon before, and their Prawn Lala White Beehoon ($6) left me with some mixed feelings. The beehoon was al dente and had soaked up the flavours of the stock sufficiently. I was also a huge fan of the prawns that were seriously succulent and sweet. The only bone I had to pick with this dish would be the strong taste of Shaoxing wine that hit me immediately.

Their Fried Pearl Rice with Pork Cutlet ($6) saw a huge piece of pork chop slapped on a bed of egg fried rice. Although the pork had a nice crisp layer, the meat was a little tough. The rice was too damp for my liking but it was flavourful nonetheless.

I’d just go straight for their signature Flying Dragon Noodles and give the rest a miss. They were definitely not stingy with the portions, so be sure to come hungry!
