Give me MORE! – Delicious Taiwanese Cuisine in a Hawker Centre!

I don’t think it’s common to find Taiwanese cuisine being sold at a hawker centre. I usually see them in food courts, but never really at hawker centres.

Give me MORE!, a stall at Chinatown Complex Market & Food Centre, specialises in Taiwanese cuisine. Run by 26-year-old Allan, the stall focuses on Taiwan classics, such as Braised Pork Rice ($5) and Braised Beef Tendon & Shank Noodle ($7.50). Apart from Taiwanese delicacies, Allan also does Jajangmyeon ($4.50), which is something I would return for.

The noodles were springy and had a nice bite, but what I loved most about it was the braised minced pork sauce. The dish has a good amount of thinly-sliced cucumbers which, when mixed in with the sauce, adds an element of freshness to it. The cucumbers also help to cut through the cloyingness of the sauce, which makes the dish less jelak. The braised minced pork was savoury and not overly salty, and I liked how each strand of noodle is well coated with the sauce.

Another dish that I tried was the Beef Rice Bowl ($5). Allan, who is a Singaporean citizen, uses short grain rice, and tops the bowl with stir-fried beef slices and caramelised onions. On the side are some blanched greens and a perfect boiled egg with a runny centre. The beef slices had a good balance of meat and fat, and the sweetness of the caramelised onions gave more flavour, which made the stir-fry even tastier.

It’s heartening to see more young Singaporeans join the hawker scene. Allan does it differently as he doesn’t bring local hawker favourites such as chicken rice or fishball noodles to the table, but Taiwanese and Chinese cuisine, which he learnt how to prepare during a stint in Taiwan.
