Highlights will consist of a sustainable crustacean bar, as well as British Red Poll prime rib, grass-fed lamb saddle, Dingley Dell pork racks and more, all prepared on a Jarrah wood-fired spit roast. The beef is slowly roasted for hours until the exterior is in beautiful shade of brown and the interior cooked to a rosy pink. The meat is deeply succulent and intensely beefy in flavour.

For a uniquely Singaporean festive buffet, look no further than StraitsKitchen, which will feature authentic Chinese, Malay and Indian dishes whipped up in Halal-certified kitchens.

During the festive period, you will have the chance to savour lobster masala, sikandari raan (lamb leg seasoned with Indian spices), Malay oxtail soup, baked salmon in brioche and roasted duck rolls in egg pancakes, available at the Peking duck carving station. The lobster masala is tender with just enough bite! A chilled sustainable seafood bar will feature poached tiger prawns, Boston lobsters, Alaskan crab legs and freshly shucked oysters.

Surround yourself in the rustic trattoria setting of Pete’s Place, while tucking in to Italian antipasti such as spicy devilled eggs, beef carpaccio, salami, sustainable crustaceans from the seafood bar and more.

There will also be handcrafted pastas, risottos and wood-fired pizzas, while mains will include oven-baked porchetta with rosemary and garlic, roasted Australian grain-fed beef rib eye and salt-crusted barramundi, all available at the carving stations. The porchetta is freaking delicious, with a good balance of fatty and lean meat. Generously salted, the roasted meat is basted with its own juices.
