Ah, laksa. This rich, flavourful local favourite will always remain as one of the most sought-after dishes in Singapore. Guang Fa Laksa is quite the underrated gem that serves their laksa with cockles, delivering quite the flavour bomb that is sure to satisfy!

The uncle who runs the stall is quite the brisk worker so you don’t have to worry about waiting in line for too long. You can either opt for their standard bowl of laksa for $3, $4 or $5, or the Only Cockles Laksa ($4/5) for folks who really love their hum

With pretty much just one dish on the menu, it was go big or go home for me. $5 got me quite the hefty portion that came with your typical laksa ingredients like beansprouts, fish cake, a whole hard boiled egg and tau pok, along with a dollop of sambal chilli.

Thick and rich, the laksa broth was deliciously savoury and fragrant from the addition of coconut milk and hae bee hiam (spicy dried shrimp sambal). It’s not overwhelmingly spicy but it did leave a slight tingling at the back of my throat. In fact, it was so addictive that I wish there was more soup to keep slurping up with the thick white bee hoon, which were springy and al dente.

As for the pièce de résistance most would be looking for, the portion of cockles, which were on the smaller side, was quite generous. I guess the portion makes up for the size of the hum. I also enjoyed how the tau pok managed to soak up the goodness of the laksa broth while still retaining its natural flavour.

As someone who has a penchant for food with 重口味 (strong flavours), I enjoyed Guang Fa Laksa’s rendition which has an old-school charm.
