Celebrate the most important Chinese festival at Hai Tien Lo as Master Chef Lai Tong Ping (黎东平) crafts an extravagant selection of culinary creations and eight prix fixe menus to commemorate the traditional festival. Available from 2 February until 5 March 2015, the auspiciously named prix fixe menus (from $108 per person) are designed for dine-in groups of Pan Pacific Singapore.

Yu sheng is one of the most important dish for the New Year. Toss to a year of abundance and good fortune with Hai Tien Lo’s Flourishing Prosperity Yusheng featuring a lavish spread of Lobster, Alaskan Crab, Hokkaido Scallop, Norwegian Salmon and Japanese Kelp. Guests can select from a range of 6 different Yusheng platters, each auspiciously named, presenting a decadent selection of fresh seafood. Hai Tien Lo’s Yusheng platters are priced between $38 and $228 and are available in both small and large sizes.

Share the joy and well wishes over a gathering of gastronomic delights and signature dishes including steamed sea perch fillet with preserved meat and shredded ginger; stewed Inaniwa udon with lobster and truffle sauce in supreme stock; and double-boiled abalone, fish maw, dried scallops, sea cucumber and fermented black garlic. Fermented black garlic only has a very mild garlic undertones. Adding it to the soup gives an elusive umami taste.

Chef’s signature Trio of Treasure includes deep-fried dumplings with squids paste and salted egg, crispy BBQ suckling pig with fermented taro curd sauce, and steamed dumplings with prawns, vegetables and black moss. The suckling pig has a lovely crispy skin and juicy flesh, but it is slightly too salty for my liking

Hai Tien Lo also has a wide selection of Chinese New Year goodies that are ideal gifts and set menus for intimate celebrations with family or friends. All-time favourites include Signature Homemade XO Chili Sauce or Koi Fish Nian Gao that symbolises abundance and surplus. Other items to enhance the festivities include a diverse selection of Yusheng platters, assortment of barbecued items and convenient takeaway sets for heart-warming reunions and family gatherings. Guests purchasing takeaway set menus will enjoy a complimentary Koi Fish Nian Gao and Homemade Caramel Walnuts with Sesame with their orders.
