When I think of Vietnamese cuisine, pho and goi cuan (fresh spring rolls) often come to my mind. I’ve always wanted to try bun cha (grilled pork with rice noodles) too, and so I was really glad to chance upon a stall that sells this underrated dish at wallet-friendly prices!

Conveniently located in the coffee shop on level one of Jurong East MRT station, Hanoi Cuisine sells authentic traditional Vietnamese food.

The stall is helmed by Hanoi-born Nguyen The Tuan who started his business last year. Tuan moved to Singapore 13 years ago to pursue an MBA at James Cook University, and his family joined him here later on. He and his wife then opened a laundromat in Toa Payoh, and an education centre. It was only recently, in 2020, that Tuan took a leap into the F&B industry. He used to watch his mother cook as a food seller in Hanoi as he was growing up. He was inspired to do the same, and made his dream a reality by opening Hanoi Cuisine.

One of the stall’s speciality dish is the Bun Cha Ha Noi ($6.50) which comes with charcoal-grilled house-made pork meatballs and pork slices that float in a bowl of light sauce (made with fish sauce, vinegar and sugar), perilla leaves, shredded lettuce and vermicelli. All ingredients and the noodles are meant to be in the sauce and enjoyed together. Grilled over charcoal, the pork had a deep smokiness, which was well complemented by the savoury sauce. The starchy vermicelli noodles with the refreshing herbs made the dish even more addictive.

Next, I had the Pho Bo Ha Noi ($6), which featured a mountain of sliced beef in a rich beef bone broth that has been boiled with fish sauce, white onions and a little cinnamon for three hours. The broth was robust and rich. I only wished that the kway teow was smoother and springier.

I ended off my meal with the Goi Cuan ($5), which comes in three pieces. Each wrap was packed tightly with fresh prawns, noodles, lettuce, and pork belly. Don’t forget to dip them in the sweet and tangy chilli sauce!
