Hillman Restaurant – This Was Where Queen Elizabeth Ate During Her Visit to Singapore

Hillman Restaurant, located along Kitchener Road, is a hidden gem in the bustling area of Farrer Park. This unassuming restaurant may not catch your eye at first glance, but it’s well worth a visit for their delicious food.

The restaurant was first located at Cantonment Road, and that’s where Queen Elizabeth II tried popular local dishes such as chilli crab and Cantonese claypot, but the restaurant has since shifted to Kitchener Road. To this day, they still proudly have a framed photograph of the Queen’s visit in the restaurant.

Hillman’s homemade tofu is a must-try for tofu lovers. The tofu is made in-house with fresh soybeans and has a smooth and creamy texture. The tofu is topped with minced pork and scallions, which add a savoury and aromatic touch. The sauce perfectly complements the tofu’s delicate flavour and goes exceptionally well with rice.

Another dish that is famous at Hillman is the Paper Wrapped Chicken. Marinated chicken is wrapped in parchment paper which seals in the moisture and allows the chicken to cook evenly, resulting in a dish that is bursting with flavours. I carefully tore open the paper and dug into the succulent and aromatic chicken inside. It’s a treat for the senses, with a captivating aroma filling the air as you take your first bite.

This restaurant was recommended by Xixi and one of the dishes she always orders is the Black Bean Hor Fun. The kway teow noodles are stir-fried in the wok and tossed with a flavourful black bean sauce. Every strand of smoky kway teow is coated in bold and savoury flavours. This was so hearty and satisfying!

If you are celebrating an occasion at Hillman, be sure to pre-order their Eight Treasures Duck, also known as Ba Bao Ya(in Mandarin). It is a popular dish served during special occasions such as Chinese New Year, weddings, and family gatherings. The whole duck is marinated with a mixture of spices, stuffed with eight different treasures, and braised until golden brown. The combination of diced mushrooms, chestnuts, lotus seeds, glutinous rice, and more, add layers of texture to the dish, making it a crowdpleaser.
