Pei Shen has very supportive parents who encouraged him to pursue his passion for cooking.

Home Flavours Braised Pork Rice 2

This simple bowl of Braised Pork Rice ($4.50) is inspired by Pei Shen’s love for Taiwan’s braised pork rice. A few hours before closing time, he will start braising the pork for the following day. To prevent the pork from getting burnt due to a lack of stirring, Pei Shen has to stop the braising process when he leaves for home. He returns at 7:30am the next morning to continue braising the pork for at least another 6 to 7 hours.

He revealed that by evening time, the braised pork would be at its best. When we visited during lunchtime, the pork was already strong in flavours in my opinion. As compared to the Taiwanese version, Home Flavours’ braised pork rice was less fatty and oily.

However, I wished that the pork was more tender. You are strongly encouraged to eat the crunchy preserved vegetables and flavourful braised pork together with the rice as they complement one another. The runny ramen egg was such a treat!

Let’s not forget the house-made chilli! It’s probably the biggest reason why I’ll revisit Home Flavours. It’s the kind of chilli that you would want to have with every meal, and with every dish you order.

Following a recipe handed down from his grandmother, Pei Shen created a house-made seasoning powder for the fried chicken. He will first fry the chicken to thoroughly cook it, and fry it again upon order to ensure that the batter is crispy. The chap chye (mixed vegetables) in the Fried Chicken Curry Rice ($4.50) could do with less salt and could be simmered longer so that it’s softer. The curry and braised sauces tasted great with just rice!

I believe that Pei Shen’s passion will be the key to his success. He revealed that he wishes to add Bao Cai Fan (cabbage rice) to the menu in the future. I was pleasantly surprised because this is the first time I actually heard someone mention this dish — I thought I can only have this back in my own home. I’m excited to see what Pei Shen launches next!
