Hong Lim Market & Food Centre, which is home to many renowned stalls, has just welcomed a new stall on the first level — Hong Lim Prawn Noodles. The stall has taken over the spot previously occupied by Famous Loyang Way Big Prawn Noodles.HongLimPrawnNoodles-02

The stall owner has over 30 years of culinary experience, and has worked in multiple zi char restaurants and hawker stalls. He decided to tap on his experience and expertise and start out on his own.

The stall owner carefully selects his fresh prawns, and also prepares the broth himself.

I decided to try all three items on the menu and I picked yellow mee for all of them. I started with the stall’s classic Prawn Noodles (Soup) ($5) that comprises generous servings of fresh prawn, pork slices, and fried pork lard. The prawn broth was rich, and each giant prawn snapped firmly when bitten into, and the juicy meat was easy to remove from its shell. The addition of golden-fried pork lard lent the dish a savoury kick. I felt that the pork slices could have been more tender.

Next, I tried the Pork Ribs Prawn Noodles (Soup) ($5). The additional pork ribs were tender and succulent, and was easily pulled apart with chopsticks.

Up for a more luxurious option? Go for the Abalone Prawn Noodles ($8), which comes with smooth and buttery abalone slices. You can get a taste of the ocean in this hearty bowl.
