Locals are definitely familiar with Chef Anne as she was the Executive Chef in the pre-opening & opening team of Sofitel So Singapore. Having moved to Saigon, Chef Anne has presented quality menu to charm the taste buds of connoisseurs. We began our dinner with a refreshing plate of Hokkaido scallop ceviche, pomelo and daikon. The fresh scallops were marinated with lime juice, onions, bacons and tomatoes bring a textural contrast within the dish. The seared foie gras was served with beluga lentils and celeriac. Seared to a glossy brown colour, it is still tasty and buttery within.
I like the roasted lobster, spinach and porcini. Beautifully presented in red, yellow and green, the lobster was succulent and mildly paired with the sweet pumpkin puree. Grilled beef tenderloin was cooked till perfection and served with asparagus and shallot confit. We ended our meal with a tangy lemon tart with marshmellow and ginger jelly. All these dishes may be classics, but Chef Anne has definitely execute well with balanced flavours and beautiful presentation. Opens from 5pm to 2.30am.
