A Global Edition: IPPUDO X SG Hawkers – IPPUDO’s Exclusive Limited-Time Collaboration With Local Hawkers

At the end of December 2020, Singapore’s hawker culture was added to the Unesco Representative List of the Intangible Cultural Heritage of Community. It highlighted the importance of our hawker culture, and ensured the government’s commitment to ensuring its longevity. It was thus heartening to see IPPUDO’s exclusive collaboration with 3 renowned Singapore hawkers and zi-char stall, all famous in their own right.

Da Dong Prawn Noodles, Jin Ji Teochew Braised Duck & Kway Chap, and Keng Eng Kee (KEK) Seafood all put out a unique dish that combines both their own recipes with IPPUDO’s. This novel collaboration is a giant step toward celebrating not just this generation of hawkers, but the generations before.

The Hawker Heritage Set ($28++) features The Hae Ramen, Lor Ark Bun, and the Kopi Chicken Karaage. The main dish, The Hae Ramen is a blend of Da Dong’s prawn soup and IPPUDO’s signature tonkotsu. Soaking up the broth are IPPUDO’s thin noodles, and the overall dish is completed with prawns, pork lard, bean sprouts and tamago. Served with Li Nanxing’s Hae Bee Hiam paste, the ramen can be enjoyed in two ways — first by savouring the original taste of the soup broth, before mixing in a dollop of Hae Bee Hiam. This dish was my favourite, with the tonkotsu and prawn flavours complementing each other to give a very robust and flavourful mouthful. The noodles were QQ, and were a unique switch-up from yellow noodles, or bee hoon.

The Kopi Chicken Karaage sees IPPUDO’s Japanese-style fried chicken thigh coated in KEK Seafood’s bittersweet coffee sauce.ippudo hawker - bao

The Lor Ark Bun features Jin Ji’s sliced braised duck sandwiched between IPPUDO’s soft and pillowy buns. Besides just being a talented hawker, second-generation owner Melvin Chew was pivotal in protecting the hawker scene during the Covid-19 pandemic. He set up the Hawkers United Facebook Group, a community that rallied behind the hawkers, and helped many hawkers to step into the digital age.
