It’s the Crustacean Season at Peach Blossoms!
This October, crab lovers will be in for a treat! Peach Blossoms at Marina Mandarin is offering 20 different crab delights!
Prepared by their new Hong Kong Chinese Executive Chef Chan Shun Wong, the young 34-year-old Chef Chan will whip up a series of dishes every month, using an ingredient. This month, Chef Chan has come up with two seven-course crustacean set menus and ten à la carte crab delights that are sure to impress!
My lunch started with Steamed Crab Meat with Egg White ($18 per serving, for 2-3 pax). A reader was commenting that it looked like Mango Pomelo, but the orange colour is not mango pudding. Chef Chan actually added carrot juice into its steamed egg white.
This dish is also available as part of Set Menu B ($88 per pax).
Chef Chan’s signature Boiled Almond Soup with Fish Maw and Crab Meat is also a must-try. Exclusively for this promotion only, Chef Chan blends this premium soup, which uses freshly-grounded almond, with fresh crab meat to enrich its flavour and nutritious content.
This soup is only available as part of Crustacean Set Menu B ($88 per pax). You can also enjoy the soup (without the crab meat) in the usual ala-carte menu.
Try out Chef Chan’s interpretation of Deep-fried Crab ($12), filled with crab meat and shredded onion, enhanced with crunchy fish roes. Chef Chan’s secret to such a delish creation is that he uses milk instead of flour mixture or soup to give the crab a creamy texture and enhance the taste.

Last but not least, I also had the popular Hong Kong-style Braised Ee-fu Noodle ($16 per pax) with fish roe, crab meat and chinese wine
Besides these dishes, you can also choose from a wide variety of the ever popular crustacean such as the Alaskan King Crab, the Sri Lankan Crab, the Flower Crab, and have it cooked in one of the eight styles offered, namely baked with superior broth, black pepper, steamed with minced garlic, chinese wine, stir-fried with ginger and spring onion, with singapore-style chilli sauce, with shallot and chilli powder, or poached.
