His passion for authentic Japanese cuisine started early at a tender age of 16 when he was merely an apprentice at Nantei, one of Singapore’s pioneering Japanese restaurants. Gifted for the art of Japanese cuisine, he was awarded Best Cook within his first 2 years in the industry. Chef Thomas’s talent and passion in Japanese cuisine has gathered him loyal regular customers.

Marrying authentic Japanese culinary philosophy with fresh, air-flown ingredients and modern cooking techniques, fans of Japanese cuisine will enjoy classic favourites as well as sophisticated reinterpretations of best-loved dishes. You don’t want to be missing out hamachi kama (or yellowtail cheek in English). It became our favourite immediately after we tasted it. It tastes best by grilling with some salt. The cheek we had was grilled to salty crisp on the outside yet firm on bite from the inside. The meat is so sweet and tender.

Saga is located on the northwest part of Kyushu island, and beef from Saga is considered one of the big three in Japan, along with Kobe and Matsuzaka. The cattle are free from stress and fed on special compound feed of corn, wheat, barley, rice bran, rice straw etc. They are generally 30 months before they get slaughtered.

If you want to try Saga beef in all its glory, be sure to visit JIN which serves the saga beef in many ways. We tried a bowl of hearty beef stew where the saga beef has been cooked slowly for hours, creating the kind of rich, caramelized flavors that make stews irresistibly good. This gives the meat time to melt and make the meat tender.

For something more traditional, go for the chargrilled saga beef sprinkled with fried garlic. Marbled to perfection, Saga Beef forms a beautiful pattern of pure-white fat weaving in and out of soft, red muscle.
