JTM Fried Hokkien Mee – Their House-Made Sambal Chilli Is The Bomb

Sambal chilli might be the main selling point for JTM Fried Hokkien Mee, but what first caught my attention about this hokkien mee stall was an online hype over their supposedly generous amount of pork lard. I know it’s an unhealthy (but still popular) topping but I LOVE pork lard so of course I was going to check them out.

The stall already had a line of customers patiently waiting from the moment they opened. Besides Fried Hokkien Mee ($5/7), they also have Black/White Carrot Cake ($3) and Oyster Omelette ($5) on the menu. From what I could see, the most popular choice among the customers was hands-down the Hokkien mee.

I was expecting a giant spoonful of pork lard to be plonked onto my plate, which was why I was a little disappointed that only a tiny amount was served to me. I learnt later that if you want more, you can request for it and it’s free, but a couple of netizens mentioned having to wait for their orders for almost an hour because the stall had run out of ingredients — namely, pork lard — and resulted in subsequent customers missing out. 

That probably means that they’ll either hold back on serving free-flow pork lard on request or (hopefully) stock up on more fatty goodness if they want to position themselves as “that Hokkien mee stall with lots of pork lard”. For now, let’s focus on the quality of the noodles first.

I know that Hokkien mee fans are divided between team dry and team wet (I’m on the latter), but this one almost bordered on soupy. The absence of wok hei was disappointing but it was still a decent dish, thanks to a fair amount of flavour from the stock. At least the prawns and sotong were fresh! There were also bits of pork belly thrown into the mix, making it quite the generous meal that will fill you up.

Now, onto the good stuff: the pork lard. No wonder these crispy nuggets are so popular; I’ve had tasteless, flat ones before and these were nowhere near that at all.

Their hand-made sambal chilli also deserves a shoutout. It provided a good spicy kick that lingered and made the Hokkien mee even better when tossed with it. The lime also gave it a piquant lift, making the overall dish less jelak.

While JTM Fried Hokkien Mee is not a bad choice if you’re living in the area, there are other places I’d prefer to get my Hokkien mee fix from (cough cough, Bedok).
