LaBrezza presents a Refreshed Menu by New Chef de Cuisine Luca Moioli

New Chef de Cuisine, Luca Moioli at LaBrezza launches a completely refreshed a la carte menu, which includes a myriad of traditional Italian fare, expertly-crafted with contemporary touches and cooking techniques.

Bringing with him original creations from his hometown, Sarnico, in the region of Lombardy, Chef Luca’s menu features an ensemble of beloved delicacies from the region that speak boldly of his culinary roots. My lunch started with a light appetizer – Cappesante Saltate e Granchio ($32). Featuring pan-seared Hokkaido Scallops and Alaskan crab meat salad, crispy breaded crab ‘polpetta’ salmon roe with lemon thyme vinaigrette, it was a platter with contrast in textures.

Taking inspiration from Milan, Chef Luca’s saffron-infused creamy Risotto alla Milanese ($38) is also another gastronomic delight of traditional Italian cuisine. Presenting a creamy rice cooked in cheerful saffron yellow, it is served with sweet tender bone marrow.

Tagliolini all-Astice ($48), is in fact my favourite from the new menu. It appears to be a simple dish, just homemade silky smooth tagliolini pasta with pan-seared Boston lobster. The garlic and Italian basil add richness and the cherry tomatoes provide acidity and freshness to reduce the heaviness.

For the mains, a highlight is the Carre e Stinco di Agnello ($48) – grilled lamb chops topped with hazelnut crust and 12-hours slow-cooked lamb shank, served with potato gratin and avocado salad.

Ending the dessert with a super tangy Semifreddo alla Vaniglia ($16) – vanilla parfait in a pool of Forest Berry Compote and Basil Lime Sorbetto. The berry compote is too strong and sour for my liking.

Every Friday evening, enjoy a tantalising spread of fresh seafood at LaBrezza, grilled to your preference à la minute. Indulge in a medley of lobsters, premium fishes like salmon and tuna, with scallops, oysters, clams and prawns, skillfully prepared with the finesse of our master chefs. In addition, savour a variety of signature antipasti and exquisite meats like beef sirloin, lamb chop and tender chicken. Price: $88++ per person | $59++ per child (4 – 12 years old)

For weekends, indulge in Prosecco Brunch (from $83++ onwards) that includes a buffet of gourmet antipasti, imported cheeses, handmade pastas and tempting dishes of lamb chops, striploins, prawns and sea bass, grilled a la minute. Imbibe in the tropical ambience of our sparkling pool while you delight in a selection of Italian favourites.
