堡大人 Mr. Burger – New Authentic Malaysian Ramly Burger Stall at Bugis Street!

Ah, how I miss savouring the delicious Ramly Burgers from the street carts of Malaysia! And I was counting my lucky stars to have chanced upon a new stall that sells authentic Ramly Burgers at Bugis Street!

Opened by a Malaysian chef-owner in October 2021, 堡大人 Mr. Burger serves a variety of burgers, sausages, and snacks.

The stall owner has lived in Singapore for 14 years and previously ran a nasi padang stall. As he loves eating Ramly Burger, he decided to set up this current stall to offer his take on the well-loved Malaysian street food.

The stall owner uses fresh ingredients from a supplier for his dishes. What’s unique about his Ramly burger is that he tries to put an ample amount of sauce, which he imports from Malaysia, and curry powder on the patty to give the burger more flavour. Although the seasoning of the Mala sausage comes from a supplier, the stall owner cheerfully shares that he utilises his experience working in China to tweak the flavours to infuse a better kick. Knowing how messy biting into a Ramly burger can get, he gives each customer a packet containing a pair of plastic gloves so that they can pick the burger up with their hands without worrying about dirtying them.

I tried the Ramly Burger set ($6.50), which comes with a side of crinkle fries. The patty was juicy and moist, with the sauces melding perfectly. The generous amount of cabbage gave a contrasting crunch to the fluffy buns. My only gripe would be that the fries were overly salted.

For the sausage, I decided to give their popular flavours a go: Mala ($1.80) and Cheesy ($1.80)! The sausage snapped firmly when I bit into it, and it packed quite a good amount of heat. However, the cheesy sausage’s drizzle could’ve been stronger in flavour.
