Nudedles.4 – Restaurant-Standard Pasta by a Young Chef in a Hawker Centre!

I was not expecting to find authentic Italian pasta in Chinatown, much less at a stall in a hawker centre here. Just opened in December, Nudedles.4 sells restaurant-standard dishes at incredibly accessible prices.

Having worked at restaurants in both Singapore and France, chef Clarence has many years of experience under his belt. Starting a business has always been his dream since he was a young boy, and he finally set up his very own hawker stall in the heart of Chinatown. As someone who loves the process of making food, I love his careful attention to detail — everything is handmade in-house. From the meatballs in the Beef Bolognese ($6.50), to the pesto sauce in the Pesto Pasta ($6.50), every component is made from scratch. His love and care for his food shine brightly in his creations.

Each pasta dish is customisable, with 8 different pasta types to choose from — Bucatini, Rigatoni, the classic Spaghetti and many more! I had the Lobster Bisque with Linguine ($8), and Pesto Pasta with Fusilli ($6.50).

I took a bite of the Lobster Bisque Pasta, and was surprised that the lobster flavour came through brightly. I did not expect the flavours to be this strong in such an affordably-priced dish. While the pasta is more expensive than average hawker dishes, it had a lot of liao. Fresh seafood such as mussels, prawns, clams and squid filled the bowl. Where can you get such variety at this price point? I liked how the al dente pasta was nicely coated with the sauce, which was not too watery.

A big fan of anything pesto, the Pesto Pasta hit all the right spots for me! The bright green pesto sauce was fresh, creamy, and not too oily. The juicy tomatoes were lightly charred, and I really appreciated the little details that overall elevated the dish. I would say go for the Fusilli or Cavatappi as your choice of pasta. The little curves and grooves hold the sauce well so you’ll get enough pesto goodness in every mouthful.

I highly recommend that you visit Nudedles.4 for their pasta, but beyond that, do enjoy the little details that take the dishes to the next level as well. If Chinatown is too far for you, their pastas are also available for delivery! Can’t wait for my next visit to try their other dishes!
