I love coffee, and I love to try my hands at baking once in awhile, so this newly-launched product is a God-sent. I’ve created two easy-to-follow recipes with the OLDTOWN Black Series Enrich Coffee. So, even if you’ve a hectic schedule, I’m sure you’ll still have time to churn out these sweet delights!

ALMOND COFFEE BUTTER CAKE

Everyone who knows me, knows that I’m a true cake enthusiast. Butter cake is one of my favourite cakes, so it makes perfect sense for me to make a coffee butter cake! This simple Almond Coffee Butter Cake is fragrant, and addictive. The recipe calls for a strong and good quality coffee, and the OLDTOWN Black Series Enrich Coffee is just the right coffee for the job.

You may leave out the almond flakes if you are allergic to nuts. The cake will still taste just as good! I know you probably won’t be able to keep your hands off these heavenly tea time treats but keep some overnight, and have them the next day! You’ll be surprised that the cake tastes even better the following day.

ALMOND COFFEE BUTTER CAKE

This simple Almond Coffee Butter Cake is fragrant, and addictive. The recipe calls for a strong and good quality coffee, and the OLDTOWN Black Series Enrich Coffee is just the right coffee for the job.

Ingredients

  • 100 g almond flakes
  • 227 g unsalted butter
  • 230 g fine white sugar
  • 2 tablespoons yoghurt
  • 4 eggs
  • 240 g plain flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 120 ml milk
  • 4 tablespoons OLDTOWN Black Series Enrich Coffee

Instructions

  1. Preheat oven to 180 degrees Celsius. Butter the sides of an 8-inch round baking pan and line the bottom with parchment paper.

  2. Evenly lay the almond flakes on a tray and toast them in a 180 degrees Celsius oven for 5-10 minutes till light golden brown.
  3. In a saucepan, heat the milk and OLDTOWN Black Series Enrich over low heat, till all the granules have fully dissolved. Do not boil it. Once it’s come up to a simmer, set aside to cool down.
  4. In a clean bowl, sift the flour, baking powder and salt.
  5. Cream butter, sugar and yoghurt till pale and fluffy.
  6. Add the eggs one at a time, making sure it’s well incorporated after each addition.
  7. On low speed, alternately add the flour and cooled milk-coffee mixture, beginning and ending with the flour. Do not overmix.
  8. Scrape the mixture into prepared pan and evenly sprinkle the toasted almond flakes on the top. Gently press it in so it sticks to the cake.
  9. Bake in preheated oven for 50-60 minutes, or until a skewer inserted into the center comes out clean.
  10. Once done, remove from oven and let it rest on a wired rack till cool.

Recipe Notes

Store this cake in an air-tight container at room temperature for up to four days.

COFFEE PUDDING

If cake isn’t your cup of tea, how about some coffee pudding? All you need is a pinch of patience, and good coffee! This pudding is imbued with a rich coffee flavour, and is very delicate and rich. It is an amazing treat that’s great at any time of the day. Be sure to chill it in the fridge for at least three hours so it can fully set.

COFFEE PUDDING

This coffee pudding is imbued with a rich coffee flavour, and is very delicate and rich. It is an amazing treat that’s great at any time of the day.

Ingredients

  • 400 ml milk
  • 40 g white sugar
  • 3 whole eggs
  • 1 egg yolk
  • 4 tablespoons OLDTOWN Black Series Enrich Coffee

Instructions

  1. Prepare 6 medium-sized ramekins. Preheat oven to 160 degrees Celsius, and boil a pot of water.
  2. In a saucepan, combine the milk, sugar and OLDTOWN Black Series Enrich Coffee. Heat the mixture until sugar and coffee are fully dissolved. Do not boil it.
  3. While the milk mixture comes up to a simmer, gently whisk the eggs and egg yolk in a separate bowl. Avoid creating too many bubbles while whisking.
  4. Add the hot milk into the egg mixture in a slow and steady stream, while constantly whisking it.
  5. Sift the final mixture twice to get rid of any cooked egg residue.
  6. Place the ramekins on a baking tray and pour the mixture evenly into each ramekin.
  7. Cover each ramekin tightly with a piece of aluminium foil. Pour the hot water into the tray till halfway up the ramekins, then bake in preheated oven for 40 minutes.
  8. Once the pudding is firm with a slightly wobbly center, remove from oven and set aside to cool. Put the ramekins in the fridge to completely set for at least 3 hours before consuming.

There you have it, two simple desserts that you can make over the weekend and share with your loved ones.
