Poh Preserved Veg Hor Fun – Chye Poh Kway Teow That is Full of Wok Hei

Chye Poh Kway Teow is a popular dish in many Teochew restaurants, but it is hard to find this dish in a hawker centre. I didn’t get a chance to try Poh Preserved Veg Hor Fun (菜莆河) when they were at Empress Road Food Centre. So when they reopened at Chinatown, I immediately made my way there.

Single-handedly run by Chef Ng who used to work in top hotels such as the Shangri-La and Kim Huat restaurant in Clementi, the stall currently offers only four items.

We started with the signature Preserved Veg Hor Fun which had a pleasant smoky fragrance and was just salty enough to tease our tastebuds. Chef Ng first smokes the wok and stir-fries the flat rice noodles over high heat before adding a spoonful of fragrant chye poh bits over.

He then pours beaten egg into the wok to seal the smokiness and flattened the mix like a pancake. Packed with umami, the hor fun has generous bits of chye poh, eggs and rice noodles in every mouthful. The Preserved Veg Hor Fun is served with either prawns or oysters.

The sweet and savoury kway teow pairs well with his Prawn Paste Chicken ($10). The mid-wings were deep-fried till golden brown, and were so crispy and juicy!

Chye poh kway teow with fried chicken wings is a truly amazing combo. Now, there is a more affordable option for chye poh kway teow, I don’t have to break my bank to enjoy it at expensive Teochew restaurants!
