Inside, a hidden cache of delicacies—abalone, dried scallops, sea cucumber, mushrooms, chestnuts. It’s complex, rich, and a beautiful marriage of textures and flavours.

Steamed Marble Goby with 15-Year Preserved Turnip (15年老菜圃蒸笋壳鱼) is another standout. The fish is steamed to delicate flakiness, but it’s the deep and intense turnip that steals the show. It’s a study in contrast, and balance.

And then, the wild card: Sri Lankan Crab with Foie Gras Pâté & White Pepper and Glass Noodles (鹅肝酱白胡椒斯里兰卡粉皮大肉蟹). It’s a daring move, this fusion of French decadence and Cantonese heat. The Sarawak white pepper wakes you up. The foie gras wraps the crab and glass noodles in velvet. You keep going back for more, unsure if you’re chasing richness or the sharp snap of spice.

From the earthy Black and White Truffle Dumpling to the addictive Deep-fried Glutinous Pork Dumpling, and the oozy Molten Salted Egg Yolk Bun, every piece was clearly made with love. Even the classics like Siew Mai and Ha Kao hit the mark. And yes, the Pan-fried Radish Cake is as good as you’d hope—crispy edges, soft centre, umami-packed.
