Ramen King – Former Hokkaido Ramen Santouka Chef Offers Authentic Ramen in Tampines Coffee Shop

Ramens lovers (especially those who can’t get enough of famed ramen chain Hokkaido Ramen Santouka), do we have good news for you! Located in a busy coffee shop in Tampines, Ramen King was opened in early November this year by a former chef from the ramen chain itself. That’s right, you can expect authentic Japanese ramen at way more affordable prices at this new hawker stall!

Patrons typically come flocking for a taste of their signature tonkotsu broth, which is said to be made from scratch using a four-step cooking process and left to rest at intervals over three days and laid in a room at 25 degrees Celsius for half a day during the final stage. The result is a pork bone broth packed with umami.

Besides Tonkotsu Ramen ($8), there’s also Spicy Miso Ramen ($8) for those who prefer a heavier hit of flavours and the indulgent Kurobuta Toroniku Ramen ($15), as well as side dishes such as Gyoza ($3.50 for three pieces, $5.50 for five pieces) and Cheese Gyoza ($4 for three pieces, $6 for five pieces).

I decided to go for the Spicy Miso Ramen, which came topped with slices of char siu that had been marinated in the chef’s secret sauce, an oozy onsen egg, vegetables and a sprinkling of white sesame seeds. The springy egg noodles were made using two types of wheat, resulting in a pleasant QQ texture.

The spice level of the soup was manageable, but expect some heat to linger in your mouth.

The char siu was sliced quite thinly, and almost melted in my mouth. I couldn’t quite taste the spices present in the marinade though. I’d recommend going for the Char-Siu Spicy Miso Ramen ($9.50) instead as it comes with four slices of the meat; having just two in the regular bowl was definitely not enough.

As for the onsen egg, it was cooked to perfection with a creamy, runny yolk.

The Cheese Gyoza looked appetising on the signage, but not so much when it came to the real thing. Torched in a fairly haphazard fashion, the cheese itself was adequate in portion but didn’t really stand out in any way. The gyoza were stuffed well with meat and vegetables, so it still made for a decent snack if you’re feeling peckish.

While the prices are not as pocket-friendly as compared to what their neighbours in the coffee shop are offering, Ramen King is a good place to stop by for bowl of good quality ramen if you’d prefer not to splash out extra bucks at a ramen restaurant!
