Just as I was saying I had too much Paella lately, I ended up in Serenity Spanish Restaurant for dinner last Saturday. Serenity serves authentic Spanish food, so the flavours are bold and explosive. This is a place for wining and dining in air-conditioned comfort or alfresco, facing Sentosa. The menu here never stays the same for too long, there will be new line-up of dishes launched every now and then, but of course, popular soups, salads, paellas and desserts still remain.

The origins of tapas have various versions. But one popular story according to scholars was, when Spanish King Alfonso the Wise was cured of a disease after he took small bites of food with wine between mealtimes, the King has declared that no wine can be served unless accompanied with food. This tradition has survived the test of time and has evolved to more than a hundred varieties today.
 
At Serenity, there is a wide selection of tapas for our pre-dinner pleasure. We enjoyed the Calamares a la plancha ($15.80) very much. The squid is grilled to perfection in olive oil, thus leaving a really soft and smooth texture. This, by far, is one of the best and softest squid I have ever tasted.

Patatas Bravas ($10.80) or roast potato with romesco sauce and alioli sauce was too expensive and salty for us.

Like everywhere in the world, a bowl of hot soup warms the insides, especially in cold weather. In Spain, although they are still famous for the classic Gazpacho, a kind of chilled tomato soup, they do have hot soups too. The Sopa Catalunya ($14.80) is a Spanish clear soup with pork, beef, chicken and butter beans. It is flavourful, which is just the way I love it.

The Crema de Mariscos ($10.80), or seafood cream soup with mussel, prawn, dory and squid rings is both creamy and tangy, with generous portions of seafood.

Here comes the signature dish – Paella Valenciana ($43 for 2, $86 for 4). The colours are bright and enticing, and the aroma is seductive. There is saffron, chicken chorizo, tiger prawns, squid and mussels. The rice is bursting with lusty flavours.

I am still very much in love with Arroz Negro ($43 for 2, $86 for 4), more known as black squid ink paella. Cooked in the same way as paella, it absorbs all the flavour of the cuttlefish and lends the sweetness to the seafood rice

At Serenity, the highlight is the Cochinillo Asado, which is a whole suckling pig done Spanish style. Round plates are used to cut the meat, and you can smash the plate on the floor when you’re done. It symbolises good luck. However, each suckling pig has to be ordered 3 days in advance.
 
We didn’t manage to try that, but we ordered Codillo de cerdo ($39.80) as a replacement. The baked crispy pork knuckle served with mash potato and green salad. The skin was supposed to be crispy but I spent too much time taking photographs that it turned dry. I felt the meat as a bit tough that day too.
 
A live band plays Spanish and Latin music every day except Sunday. Professional flamenco dancers romance the dance floor with passionate steps every three months.
 
Oh did I tell you, if you ask for ice water, it is $2 per person.
